Ackee and Salted Fish (usually cod) is Jamaica’s national dish. Add a few slices of avocado, roasted breadfruit, boiled or fried dumplings and your belly will love you. I have often recreated my dishes and add whatever ingredients I happen to be in the mood for, at that moment. In this photo, I have added okras and bacon. I LOVE okras.
Ackee is sometimes mistaken for scramble eggs, but the taste has no relation. If ackee is overcooked, it tends to loose its shape, and disintegrate. I try my best to maintain their wholeness and shape during the cooking process. You may notice that as you fold the other ingredients in, the ackee may break apart. However the flavor remains, regardless of the shape. Why? Because I cooked it…
During my journey, I will be tweaking my ackee with a variety of ingredients, which may or may not include the traditional codfish. So come on for the ride.
