Ackee with Ratatouille

 

I did it again; I reinvented Jamaica’s national dish and I LOVE IT!   One thing for sure; my children really enjoy ackee and saltfish and can’t seem to get enough of it.  Being the food enthusiast that I am, I’m always finding new ways to recreate my dishes.  An explosion of flavors that complimented each other, different textures and taste were some of the advantages of this ackee ratatouille.

Being the passionate,  totally devoted and adventurous cook that I am, I had to combine eggplant with ackee. I had to know, feel and taste the end product. Is it a winner? Absolutely!

I’m an advocate of fresh ingredients and gets super excited just by watching the farmer pick my vegetables or pull them up from the earth. The taste is out of this world. If you have never had a chance to taste fresh food, please make it your duty to find a farm, or better yet, grow your own food. I do shop at the farmers market as well, but  nothing beats picking your food fresh from a tree.

The ratatouille was super mellow and tender yet still had a bite to it. I don’t like mushy vegetables at all. I eat them practically raw, and since I eat with my eyes first; I had no problems devouring this d’luscious meal.
