Authentic Jamaican Hominy Corn Porridge

Breakfast is the most important meal of the day.  If I skip or miss breakfast, it interferes with my mood.  I get totally dysfunctional.  I become cranky, easily aggravated and loose concentration. In order for me to perform 100% each day, I HAVE TO HAVE BREAKFAST.  It is just as important to me as sleep. Whenever I am sleep deprived, I’m just as  miserable  as not having  breakfast.  You’re probably saying, “as much as you cook, do you really miss breakfast?” There are only so many hours in one day, and so much that needs to be accomplished.  I try my best to be superwoman, but sometimes I do remove the “S” from my chest and return to being human.  On rare occasions, I do miss breakfast, and  with so many people depending on me, I barely have time to myself.  Such is life.  I do have  to have my cup of tea in the morning, but I do not consider that to be breakfast.

Today I made hominy corn porridge for breakfast.  My friend Avis called me a few days ago, asking how to make hominy porridge. I have been meaning to Fedex her so many of my dishes, but they never seem to make it to her. She is just gonna have to wait until she visits Florida. I decided to make some  hominy today  and provide Avis with instructions later.  I’m quite sure she needed it one week ago, but she’ ll understand.

This has been soaked overnight

Hominy are dried corn kernels, that can be soaked before boiling. I don’t recall observing how my grandma made this porridge, I just remember eating it. Each time I overhear someone talking about hominy, they stated that it “takes some time to cook.”  Being an individual whose time is of essence, I soak my hominy overnight and then cook them in the morning. I refuse to spend all day making breakfast. Isn’t that why we prep? Well this hominy was slow cooked to perfection.

If you have toddlers or young children, you should ensure that they eat breakfast before you send them off to school.  Breakfast boost brain power and reduces stress, so they are more likely to remain focused  in school and you will be a proud parent when they make the honor roll…..simply because you prepared and insisted that they eat their breakfast.  Even if they don’t make the honor roll….at least they tried to… and you did your part.
