I don’t know about you, but I would feel completely lost without my imagination…my culinary imagination. Now, If you are totally uninspired or need a little culinary motivation, have no fear; I’m here to inspire you. My inspiration usually stems from the ingredients I have on hand. Believe it or not; most of the times, it isn’t necessary to run out and buy new food items for your current meal/menu.
Do you have any leftovers in your refrigerator? Are you pondering what to do with it? Well guess what? If you are an avid omelette eater like I am, here’s a great idea: Remix those leftovers and make a bad ass omelette! In my world, an omelette equates to: eggs, leftovers (veggies and all), onions, spinach, cheese, some fresh herbs and a pinch of himalayan salt.
This bad ass omelette was a remix of the previous nights dinner of shrimp and scallops with asparagus. And because I’m such a resourceful individual, I transformed those ingredients into a bad ass seafood vegetable omelette. Oh…and don’t ever waste your spinach again. There’s so much you can do with it, like adding it to your omelette along with a few crumbles of feta cheese, or any cheese you prefer.
