Beef with Sugar Snap Peas and Bok Choy

 

Do I consider myself a vegetable lover? I certainly do.  These days, the majority of my grocery list includes vegetables. It’s become habitual. My idea of vegetables goes above and beyond the water lettuce….what’s the name of it again? Yeah, the iceberg lettuce.  The iceberg lettuce RARELY makes it into my shopping cart.  I love greens, all kinds of greens, baby lettuces, bitter lettuces, gourmet lettuces and a all the veggies that you would probably wouldn’t give the time of day. If it’s an unfamiliar vegetable, it’s definitely going in my cart. I’ll figure out if I like it or not, once I get home.

I haven’t given up meat. I’m a meat lover. Matter of fact, I don’t even think I ever want to give up meat. I think I  equally enjoy the taste of meat and vegetables, especially when combined as one dish, hence this beautiful bowl of love boasting beef with sugar snap peas and bok choy.

My son D’Angelo went in on this dish, for seconds and thirds and I HAD TO STOP HIM!  Like, don’t you think anyone else wants to eat. Stop being so selfish.  I may have to install a security system to alert me, each time he enters the kitchen, because he’s developed an insatiable appetite, on top of his already insatiable appetite. Thank God, I stopped buying dead foods because judging the way he eats, he would be as huge as a house…..no, let me correct that…as huge as a building. His excuse is always, “but it taste so good!”

I love bok choy, especially baby bok choy. They are tender and crunchy just the way I like them, as close to uncooked as possible. Actually I enjoy all of my veggies that way. Cooking them too much or too long practically depletes all the nutrients, which makes me happy that my eating habits allows my body to absorb all the nutrients naturally.

My grandma and I usually disagree on the nutrient content on overcooked veggies. She hates them the way I prepare them and wants them softer. She say, “Denise I don’t think if you cook it softer, all the nutrients gone.”   Well I don’t care what she thinks. I have been caring for her for over 14 years, she is now 87 years old, so I must be doing something right.
