Braised Mushroom Oxtails

 

Braising oxtails is my preferred technique as it enhances and elevates the flavors to create a succulent, tender, melt in your mouth masterpiece. Adding portabella mushrooms fortifies and add depth of flavor and color to the stew.

Oxtails isn’t really from an ox…. at least not in these days.  It’s actually beef tails that are being sold as oxtails.   My cousin Carol refuses to eat oxtails, sold in the form of beef, simply because she has the ability to differentiate between the ox and the cow. I’ve got one thing to say: “Carol, you have got skills!”

Ox or cow….I could care less.  If you cook it like a champ, then you’ll feel like a champ. I damn sure felt like a champ after devouring these mushroom oxtails. Did I ever tell you how much I LOVE mushrooms.  I can’t get enough of the meaty texture and the umami flavor.  Jamaican customarily add butter beans to their oxtails which is an excellent combo. I’m known for tweaking dishes simply because that’s just my style. I love variety. My palate screams for interesting, d’luscious meals that creates an impact. Mushroom oxtails is the bomb!!!!

Braised oxtails, stewed oxtails, any oxtails that I prepare turns out to be a winner. I love oxtails so much, I have included not one, but two fantabulous oxtail recipes in my cookbook, From My Taste Buds To Yours. While the name or sound of ‘oxtails’ may deter you from wanting or having any desire whatsoever to eat or taste this awesome creation; you should really give it a try if you haven’t already done so. Oxtails are an excellent choice for stews or soup. The bones intensifies the flavors and it is just pure d’lusciousness.

I’ve never laid eyes on a a real live ox.  I’m quite sure the resemblance is that of a cow.  I’m absolutely positive the taste falls nothing short of divine. If you are thinking: “She is out of her mind to be eating oxtails,” think again. I am perfectly sane. I will eat or try just about ANYTHING, as long as it’s presentable (because I do eat with my eyes first), flavorful and filled with the essence of unconditional LOVE.
