Corn Cake with Dragon Fruit Inspired Compote

Why do I buy so many fruits? Because they are mother nature’s candy. I’ve learned to buy fruits when they are in season, where their unique flavors are fully mature. Have you ever purchased a watermelon or plum which seems to have lost it’s identity somewhere along the way. You bite into it effortlessly, hoping to find that unique taste that it should have inherited, but seems to be lacking in every area. I have been there one too many times but no more.

When fruits are in season, they taste magnificent. Their juices will bring you to a complete foodgasm. I added papaya to this fruit compote and let me tell you; It was heavenly, so divine, I could have sworn I heard angels singing. The cornbread was so moist, I’ll refer to it as corn cake. This was one of those decadent desert that you can’t eat standing. After the first bite, I had to sit my pretty ass down. This cornbread/corn cake was supposed to be eaten slowly, tactfully, graciously, as if you don’t want it to end. It’s simply divine. Why does my food have to taste so good?

I get teased all the time by some of my relatives that I enjoy my food too much. Most people cook and don’t wanna eat, but not me. I’m eating that bad boy. After putting in all of my LOVE, I’m damn sure gonna enjoy it. I can’t eat out because I don’t wanna get sick (endometriosis), and if I do eat out, I have to put in a lot of work to research the restaurants to ensure that they are cooking from scratch and not using artificial preservatives. That’s a lot of work just to eat out. So, I remedy that by preparing my own meals, just the way I want it….and they are darn d’luscious!!!

I don’t blame me at all.
