Curry Shrimp with Sugar Snap Peas and Rainbow Carrots

SHRIMP has no boundaries in my son Robert’s world. He will scoff at eating chicken on a daily basis, but will devour any style shrimp, on any given day.   At his request, I prepared curry shrimp. Variety should probably be my middle name, because it’s not remotely possible for me to create the same exact curry shrimp recipe over and over again. Hence, this awesome curry shrimp with rainbow carrots and sugar snap peas.

The beauty about having lots of vegetables on hand, is that they can be used interchangeably in any dish; be it vegetarian, paleo or whatever floats your boat. For a person who chooses a paleo lifestyle, this curry shrimp right here is perfect as is. If you are able to tolerate starch, this is an excellent accompaniment to rice or pasta.

I’m not on any restricted diets. I don’t believe in diets.  My culinary mood and desires changes more often than the weather.  I’m very disciplined and choose to listen to my body by nourishing my soul, whenever it calls for specific ingredients. At times, my Temple has absolutely no desire for rice or pasta. I can’t explain it, but there are times when my Temple refuses to accept certain starches. Those are usually the moments when I crave salads and not just any salad, they have to be WARM salads.

Just before my monthly cycle, I crave vegetables; warm vegetables.  Like, who does that? Most people I know crave chocolates and desserts and all kinda sweets. In any event, I listen to my Temple and prepare WARM salads. Curry shrimp with rainbow carrots and sugar snap peas is a perfect example of a warm salad. I usually add a nice serving of lettuce greens and toss it all together. Have you ever done that? OMG! talk about d’luscious!!!! Greens never tasted so good, until you toss it with some protein and the jus from the protein. There is no need for salad dressing either. Salad dressings are simply easy to make. It’s a combination of oil and vinegar with a few tweaks here and there, so please don’t buy salad dressings in a bottle, especially if you claim you are watching your weight. You’d be surprised at what’s in store bought salad dressings. The jus/gravy/sauce from the protein (in this case, the curry sauce) compliments your salads excellently! And just to let you know, gravy/sauce/jus isn’t unhealthy either. It’s what you put in it that makes it unhealthy.

See, you simply have to step outside of your comfort zone and look at food through different lens. Once you do, you too will notice that the culinary possibilities are endless. So eat and be merry!
