Dragon Fruit Inspired Salad

 

 

 

For a while now, I have developed this fascination for dragon fruit. I had no idea what it was when I first stumbled upon this unique fruit, but I knew that I had to try it. I am a foodie and of course I an intrigued by anything considered food especially exotic ones, and the looks of this fruit screamed exotic. The Dragon fruits that I have eaten, has the taste which is similar to that of a kiwi fruit.

The health benefits of dragon fruit are outstanding as well. It’s high in vitamin C, assist in lowering diabetes, blood pressure, cholesterol and stimulates appetite as well. It also claims to be a natural detox. I don’t know about you but I am excited about detox. I want my body to rid itself of all the unwanted toxins. I want to remain as healthy as I can.

The cantaloupe that I added to this fruit salad was just bursting with flavor. It was so fragrant, you could smell it a mile away. My favorite supermarket had them on sale. It was a buy one get one free. I all for great bargains. I like to tell people that I am an educated consumer. I got two cantaloupes for the price of one. So I am happy happy happy and they are sweet, sweet, sweet…just like me.

Pineapples make it to my kitchen aka my sanctuary at least once per week. Sometimes I buy one and sometimes two. I do a lot with pineapple and non of it goes to waste. I even use the skin for juices. No honey…the only part of the pineapple that is discarded is the stem, and I have attempted to recycle that several times as well…I try to plant them. I did have one that was doing so well, but my child decided to root it up and transfer the pineapple to another area in the yard. That was the last of my pineapple that seemed promising. But I won’t give up.

Strawberries adds that natural sweetness to everything, and I has some on hand, so it was definitely going to be included. I really enjoy eating all of the fruits that God has created. I have realized that every plant/tree/root has boast some kind of health properties and I considered myself privileged to be able to consume a variety of fruits and vegetables. I know that there are so much more that I have to taste from different regions of the world. I can’t wait….


I enjoy fruits with cheese, and from time to time, will pair my fruits with different types of cheeses . I decide to pair this fruit salad with crumbled blue cheese and it was double awesome!

Dragon Fruit inspired Fruit Salad Recipe:
1 cantaloupe peeled and cut into chunks
1 pineapple peeled and cut into chunks
1 pint of strawberries washed and cut into chunks
3 dragon fruit peeled and cut into chunks
Add to a bowl, toss, serve and enjoy!
