Herbed Grilled Chicken Salad with Roasted Beets and Bell Peppers

 

I’m a bone sucking diva who prefers any section of the chicken that is boned. Why? Because I love to suck on and chew the bone. Why? Believe it or not. The flavor of the meat  lies within the bone. Now, I’m not one to be underestimated. I’m capable,  willing,  have always  and is known for adding depths of flavor to chicken breast. Most individuals shy away from chicken breast, because they claim it’s usually dried out. But no, not my chicken breast!  Once you taste …..matter of fact…I have brought many to love chicken breasts, but it’s usually the ones I have prepared.  All dark meat lovers that I know off,  and have prepared and served chicken breast, actually embraces and enjoys my white meat. Why? Because it’s simply the bomb!

My grilled chicken salad with roasted beets and bell peppers, includes chicken breast, and is succulent, flavorful and juicy. When my friends Mell and Ynick visited Florida, I was determined to wow them, by demonstrating my culinary skills. Their trip was rather short and they were extremely busy, so I decided to surprise them with dinner. And boy were they surprised! Mell was absolutely curious and wanted to know how and what I had done to develop these absolutely amazing flavors in the chicken breast. She said she had never tasted anything so succulent and juicy in her life. She was curious as ever, but I’m used to that. I do have that effect on people.

Didn’t I tell you I’m the bomb! LOL.
