Jamaican Rum/Black Cake with Hazelnuts

Tis the season to be jolly…. fa la la la lah all year round.  Yes that’s exactly how I feel.  Why wait until the holidays to enjoy such decadence. I’m Jamaican (you probably know that by now) and we; well most of us, love us some black cake, rum cake aka Christmas cake. It’s a sinful indulgence during the holiday season, hence the name Christmas cake. It’s moist, decadent and laced with white rum and some kinda red wine. I like to use a cabernet savignon. My mother uses port wine. To each his own.

Traditionally raisins and colorful mixed fruits are used BUT I’ve never use them. I never like them, they just taste weird. And since I’ve become a health fanatic, I became skeptical because they are green, red and yellow. The first thing that comes to my mind is that chemicals and food dyes were added. I’m very anti-anything with chemicals and preservatives. I truly try my best to avoid them. Most dried fruits have preservatives in them, called sulfur dioxide. I  love dried fruits and use REAL ones WITHOUT the chemicals, and I soak them in the red wine and Jamaican white rum….for months. Some folks have buckets of the infused liquor soaking for years. Can you imagine how intensely flavorful those cakes are?

Very rarely do I find a Jamaican rum cake that suits me, so I prefer to bake my own. I like a ‘cakey’ black cake, not one that taste like a pudding. I like to know what’s in my food and cooking and baking from scratch brings me piece of mind, because I don’t have to guess and I’m absolutely sure there aren’t any mystery ingredients in my food.

I’m so glad I like to play with my food. This time around, I added hazelnuts. My name wouldn’t be Ange’luscious if I didn’t tweak it. If you look closely, you can see little pieces of hazelnut running through the  outer exterior of the cake. Hazelnuts are one of my favorite nuts.  I think my favorite nut is pistachio. I can go through three pounds of pistachios in less than a week. without even trying. I think that’s one of the reasons my skin is so radiant. Next time around, I’ll add pistachios to my Jamaican rum/black/Christmas cake. I know it’s gonna be fire!
