Luscious Salad

 

Luscious SaladSince the beginning of time; or as far as I can recall; salads have been a major component of my meals. There had  always been some kinda green, or a vegetable on the dinner plate. Now it’s become habitual, or should I say, second nature. As a child, it was the basic iceberg or red leaf lettuce, tomato and cucumber combo. My grandma would prepare an awesome dressing that tasted somewhat like an italian dressing, which she would drizzle over the salad.

These days, I continue to practice my salad rituals, which of course, have been elevated from the standard lettuce, tomato, cucumber combo into a luscious, vibrant and bountiful creation.  Salads are super easy to compose, using whatever ingredients you have on hand.  This luscious salad is comprised of gourmet lettuces, rainbow chard, spinach, roasted corn, roasted beets, chocolate tomatoes, hass avocado and black sesame seeds. Talk about divine! The hass avocado is just super creamy and the  dressing is simply a drizzle of lemon juice. I didn’t add anything else because I didn’t need to.

I can’t seem to fathom the idea of omitting vegetables from my diet.  In my world, it’s unheard of.  I honestly feel sympathy for those who do not eat natural foods from the earth. It leaves me to  ponder on who or what my have caused trauma in their lives to create such a deep resentment towards nutritious foods that adds value and longevity to their lives.

Why do I eat so much salad? Because it’s nutritious; I come alive; I feel alive; I’ve noticed a huge difference in my overall being; the severe pain that I experienced with endometriosis, isn’t exacerbated. Real food heals. Real food is medicine. Let it be your medicine.
