Mahi Mahi and Sweet Potato Fries

Ya gotta love fish and chips, especially when it’s sweet potato chips. I don’t know what had gotten into me, but I felt the urge for chips….or should I say fries. Sweet potato and russet potato fries, fried in the oh so gorgeous duck fat, then sprinkled with sea salt and chopped rosemary… POW!

Sweet potatoes are naturally sweet and I love it because it’s cancer fighting. Being a cancer survivor, I’m in for anything that’s anti-cancer. It’s also one of the reasons why my diet consists of foods that are directly from the earth. I live for herbs, fruits and veggies, and refuse to deprive myself of the foods that bring me comfort and joy. I say, all things in moderation.

I fried these potatoes twice, yes that’s right….twice. I fried it once, placed it in the refrigerator to firm up, then fried it again. The minute it was done, I dusted it with fresh rosemary and sea salt. It complimented the sweet potatoes well.  If I wasn’t swift about my food, I probably would not have been able to eat any of the mahi mahi, let alone blog about it.  My family just seem to be crazy about my food, and my son D’Angelo eats without consideration of anyone else. I don’t know what’s gotten into him. He’ll devour the food, then say, ‘it was so good, I couldn’t leave any for you.”  Once upon a time, he took pride in sharing my meals with the neighborhood kids. He wanted them to taste all the natural juices or try whatever meal I had prepared. Now he refuses to share with his friends, because, ‘it’s so good.’  Don’t know what I’m gonna do with that boy.  Oh well, I gotta love him. Even though fish is a staple in my house, I rarely pair it with fries,  but after this combo, I think I just might rotate it into the household menu regularly……if D’Angelo allows me to eat in peace.
