There really isn’t a need for me to elaborate on or about Shrimp and Pasta. It speaks volume for itself and doesn’t warrant the need for kudos. Actually… yes it does! Shrimp in a garlicky buttery sauce, with shredded veggies, tossed in fettuccine…. or thin spaghetti. Need I say more.
Here’s the recipe!
Shrimp Scampi Recipe
1 16oz package of spaghetti or fettuccine
1 pound shrimp peeled and deveined
2 tablespoons olive oil
3 cloves of garlic
1 tspn fresh thyme leaves
1/2 Vidalia onion sliced
1 stick of butter
Course sea salt to taste
1/2 teaspoon cayenne pepper
1 tablespoon garlic powder
Directions:
In large pot bring water to boil. Salt water, add pasta and cook pasta according to directions on package.
In skillet:
Add olive oil and butter
On medium heat add onions and saute until translucent.
Add garlic, saute (low and slow) until tender about 2 minutes (do not burn garlic)
Add thyme leaves
Add shrimp, salt, pepper and garlic powder to taste
Toss until shrimp turns pink, about 5 minutes
Drain pasta and transfer to dish
Pour shrimp over pasta
Toss to combine and serve
