All meals should be celebrated. I must have said it a thousand times, but it’s true. My love for food propels me to recreate simple breakfast dishes with pizzaz. Scrambled eggs can be enjoyed in many different ways, but it takes on a whole new perspective when you serve it up in a spinach wrap for breakfast. I’m quite sure picky eaters would be inclined to eat a healthy, d’luscious spinach breakfast wrap.
Preparing wraps is an excellent method used to enjoy dishes that would normally seem complex. Anything than can be eaten with a fork can be wrapped. On most days, it’s usually omelettes for breakfast and they are usually packed with everything but the kitchen sink, and are super d’luscious.
This spinach breakfast wrap was quick and easy. I sautéed onions, tomoatoes, bell peppers, scotch bonnet peppers and spinach, added a couple of beaten eggs and scrambled them. I heated the wrap in a clean dry skillet, so that it would be warm and pliable, then added the spinach egg filling and wrapped away. It sure beats eating those preservative laden breakfast wrap in the freezer section of the supermarket.
