Stir Fry Shrimp with Red Kale

 

Shrimp with Red KaleGod has truly blessed me abundantly.  My dishes receive numerous accolades because of their visual appeal. I’m often told the colors are vibrant.  If you have been following me on social media: facebook, twitter, etc; you’re probably already aware of my obsession with food shopping and the abundance of produce that makes it into my sanctuary.  I purchase so many veggies, that I sometimes run out of space in my refrigerator. I think it’s time that I invest in a much larger one.

My dishes are inspired by the produce and inventory that are stocked in my sanctuary. I look around and create the menu with the ingredients. I buy lots of bell peppers; red, yellow and orange. I rarely buy green ones. On most days, I’m roasting the bell peppers, but today it would be  stir fry, along with the shrimp and red kale. Stir fry dishes are fast and easy. They are my go to dishes when I want to enjoy a healthy meal in less than 30 minutes.  My shrimp dishes are always accompanied by tons of nutritious vegetables.  I begin by steaming the rice, which takes no longer than 20 minutes. By the time I’m finished prepping the veggies, the rice is already cooked and all I have left is approximately 7 to 10 minutes to stir fry the shrimp, red kale and other ingredients.

The next time you think of opening a can of anything for dinner, ditch the idea and create a healthy meal for yourself or your family, such as this stir fried shrimp with red kale.
