Tuna Salad with Cranberries

 

Healthy LivingI don’t believe in diets.  I do believe in choosing a healthier lifestyle. I believe in a balance diet. I need my carbohydrates, protein, veggies, and everything else, and I refuse to deprive myself of certain comfort foods.

My cubby mate at work, who shall remain nameless, (she told me to say that) started this mean green diet on Monday.  This diet consisted of  kale, cucumber, ginger root  and celery which was blended into a drink.  She drank this repeatedly throughout the day. This drink was supposed to assist her in achieving her weight loss goal.  I am NOT at all  against the drink. I just don’t think it should be the only food consumed for the entire day… all day!  She claimed her friend lost 11 pound in 6 days.  That is  definitely not a healthy way to loose any amount of  weight. I express my disapproval of  her weight loss program, and suggested that she ate small, healthy portions throughout the day.

It is now Thursday and my cubby mate has informed me that she has quit the diet, because she experienced dizziness and fatigue. She is also hypoglycemic and stated  she should have consulted her doctor first. I reiterated that fad diets aren’t necessary.  In my opinion, if it isn’t medically necessary, I won’t be indulging into anyone’s idea of a diet.

Tuna Salad

I prefer fresh fruits and vegetables as opposed to a bag of  unhealthy chips, but I do need my carbohydrates.  I really do.  I love rice, dumplings,  and  breads. My carbs keep me going. That’s MY sugar rush. Anyone who knows me personally, will inform you that my mouth is always in motion.  It behooves them as to  why I am not overweight or obese. I eat from all the food groups.  I actually take offense to the idea or thought of losing weight.  Never, ever ever, tell me I’m loosing weight.  The first thought that goes through my mind, is that I will loose my derriere….and oh no, I can’t and won’t have that happen!  That is one of my prized assets.  I get all my accolades from my derriere and enjoy every minute of it.  I am extremely comfortable with my body. I LOVE MY BODY!

What’s my secret for not being overweight?

I refuse to allow a doctor’s graph or a magazine to determine how  I should look or what my physique should be.

I guess my metabolism is high.  I eat all day… throughout the day.

I have eliminated soda from my diet.

I drink only almond, rice and coconut milk.  That just my preference.

I love breads. I prefer whole wheat, multigrain, oatmeal, and pumpernickel. On very RARE occasions I eat white bread.

I limit my intake of  processed foods.

I prefer fresh fruits, vegetables, herbs and produce.

I COOK FROM SCRATCH.

I eat out once in a blue moon. No joke.

I am so against take out, that  if I do order, you will hear sly comments such as “God must be coming” or “It’s gonna snow in Florida.”

I don’t even have a gym membership, however I do exercise. I tried the gym membership thing once and it interfered with my “lifestyle.”  Okay, okay, I’ll be honest. I meant that it interfered with my “cooking” and time spent in the kitchen. During my workouts, all I could think about was the kitchen and all the culinary masterpieces I could have created. So I quit…. I just gotta have my food!

Tuna Salad Recipe

1 head of red leaf lettuce
1 head of green leaf lettuce
2 6oz can of tuna in water
1/2 cup of dried cranberries
3 hard boiled eggs sliced
cayenne pepper (optional)
vidalia onion dressing (about 2 tblspns)

Instructions:
Cut of stem from lettuce, so lettuce becomes loose leaves
Toss lettuce leaves and arrange on Platter
Drain water from tuna can
Place tuna center of loose lettuce leave
Arrange boiled egg slices atop the salad
Spread dried cranberries evenly over salad
Drizzle with vidalia onion dressing
Sprinkle with a dash of cayenne pepper (optional)

Eat as is or toss and enjoy!
