Vegetable Stir Fry with Dangmyeon (Korean Sweet Potato Noodle)

 

Dangmyeon is a sweet potato noodle, made from sweet potato starch. You can find it in a Korean Market.
As per the package, it is the main ingredient in the popular Korean dish “japchae” which is often served at family gatherings and special occasions.

Being that I am always embracing vegetables, I decided to tweak the oriental dish to my liking. This authentic creation of mine is totally meatless and the Dangmyeon noodles added that extra touch that created an aura, as if I was in another world.  It is one of my vegetarian’s delight. Sometimes I just do not feel like eating any meat and this was an excellent choice for a meatless dish. Who needs Chinese take out when I can throw down like this in the kitchen aka my sanctuary.  Vegetables doesn’t have to be boring. A salad doesn’t have to be lettuce and tomato. Step outside of your comfort zone and get creative. Be bold!
