Roasted Purple and White Cauliflower with Mahi Mahi and Roasted Vegetables

T’was a glorious day!  I could taste the umami flavors of the roasted vegetables as the thoughts of eating this long anticipated dish ran through my mind.  I meticulously chopped all my vegetables, place them on a sheet tray, drizzle them with olive oil, himalyaan pink salt and cayenne pepper and carefully placed them into the oven to roast. I knew it was the beginning of something great.

Earlier that day, as I strolled through the isles of the supermarket aka my Toys R Us; I could hear the cauliflowers calling me. I already had a white cauliflower at home, but the purple cauliflower was feeling lonely and undeserving, so I decided to take it home with me. Purple Cauliflowers need love too. I embrace colors or just about anything that looks different. As far as the culinary world extends; I’m curious as hell and haven’t learned to mind my own business. I hope I never do because each time I find a unique vegetable or fruit, I get excited; then I cook it and get more excited! Like yeah…I did that!

Isn’t this gorgeous? I wanted to curry this cauliflower so badly. I really enjoy curried cauliflower but I wanted to do something different for me….and for you as well, so I sliced them into cauliflower steaks. I just wasn’t in the mood for meat (my body gets like that sometimes). I listen to my body and nourish my Temple when it demands really healthy foods. Cauliflower has a meaty structure. I like my cauliflower almost raw, tender but a little on the crispy side, so I don’t cook them too much. I love most of my vegetables that way.

Raw Mahi Mahi
Like I said, I wasn’t in the mood for any meat, so I went the fish route, Mahi Mahi, yeah it was in my fridge too. I try to keep foods that I can cook in under 30 minutes for those days when I really don’t intend to spend too much time in the kitchen. Now that’s pure gorgeousness right there. I dusted one of the mahi mahi loins with my special blend of garam masala. Yeah, I’m a bad ass like that!

The screen is tempting me to lick it right now. It really is. So I’m gonna carry on.

Pow! Now this is what I’m talking about! D’lusicous roasted mushrooms, bell peppers, tomatoes and all the goodies, roasted purple and white cauliflower with Mahi Mahi baked in a super dooper buttery sauce. And you say eating healthy is hard? Y’all betta stop da madness and get it!

There’s a rule in my house: no one eats until I take photos of my food. I’m so happy I implemented that rule, because the finale plate in the photo is usually my dinner/breakfast/brunch or whatever culinary delights I choose to whip up. The roasted vegetables were sooooooo damn slap yo momma good! I was able to enjoy this plate. .

I had multiple plans for these roasted vegetables. After all, t’was a glorious day; until I found out that my dog had helped himself to this entire bowl of roasted vegetables. When I tell you this thing was out of this world….believe me! The darn dog didn’t even leave behind an ounce of the olive oil with those fabulous juices. Nothing for me to dip a nice crusty loaf a bread in; nothing for me to recreated another fabulous dish; Nothing. I wanted to be mad. I really wanted to be angry, but I couldn’t find that anger. I searched for it, but it just wasn’t there. I may be too much at peace with myself. Guess I’m gonna have to make more roasted vegetables, and I know that you will too.
