Ravenous was D’Angelo, when his anxiety sky rocketed and he felt that he just couldn’t wait another second for a slice of my spinach cheese frittata. He was just whining about how hungry he was, as if he would have keeled over unconscious, if he didn’t have it right-now-this-minute. I have never seen or met a child that whines as much as he does. Let me tell you a little story: When D’Angelo was born, he came out into this big beautiful world whining. The doctor’s exact words were, “this one’s gonna be a whiner.” So said. So done. But good God, the child is going to be 14 years old in less than two months, and he is still whining. I couldn’t even concentrate to photograph the entire spinach cheese frittata. So to shut him up, I gave him a huge slice. You should have heard him moaning when he took the first bite. You would have thought he hadn’t eaten in about 7 years. Like seriously?
I do understand that he loves my food and I love and appreciate him so much for being my child and for have an insatiable appetite. If I you were him, you would be moaning too, which is the reason why I have the recipe for you, so that you can enjoy and savor all the flavors as much as he did. This is definitely a winner.
SPINACH CHEESE FRITTATA
2 Tbsp of olive oil ( or your favorite oil)
1 small sweet onion sliced or diced (I used vidalia)
1 medium tomato seeded and chopped
12 oz of baby spinach
9 eggs
2 tablespoons of heavy cream
1/2 cup extra sharp cheddar cheese (more or less if you want to)
Pink Himalayan salt to taste
cayenne pepper to taste
DIRECTIONS
Preheat oven to 350° F
Saute onion and tomatoes in olive oil, in an OVEN PROOF skillet for approximately 3 minutes.
Add spinach and sauté until wilted.
Season with salt and cayenne pepper to taste.
In a separate bowl beat eggs. Add heavy cream and whisk to combine.
Spread sautéed spinach evenly on bottom of pan before pouring in the egg mixture.
Pour egg mixture into sautéed spinach.
Cook low and slow for about 5 minutes.
Stir to distribute all ingredients evenly.
When eggs are almost set, sprinkle cheese on top.
Place in the oven for 10 minutes until done.
Remove from oven and allow to cool.
To transfer frittata to a plate, place a plate on top of skillet and invert.
Then place another plate on top of that plate and invert once again.
Now the frittata should be looking at you, just like it is in the photo.
