Jerk seasoning may be one of the most commonly used ingredients in my home. I say this often and I will say it again: an authentic jerk seasoning makes everything taste simply superb! Back home in Jamaica, you can easily locate a street vendor selling jerk “something” whether it be chicken, pork, fish or shell fish. It is slow roasted over an open flame, (in what we call a “drum pan”) which is a barrel made from a zinc-like material. Currently, I do not own one of these authentic drum pan, however I do anticipate locating and purchasing one in the future. At the moment, my barbecue grill performs an excellent job and continues to deliver succulent pieces of meat and fish.
I’m usually pleased with the results of my jerk chicken prepared in the oven, but whenever I place the chicken on the grill, whether it be whole or sectioned; dig my teeth into and taste the first bite of goodness, I willingly and completely submit and become totally lost in my element, whilst in a temporary state of oblivion. Do not speak to me, or interrupt the joy on my face and palate, whilst I’m devouring my jerk chicken. It’s just that freaking good!
Now I know that right now, this minute, you want some of my jerk chicken. I know that you have already zoomed in on the photo several times. I know that you’re salivating. I know you have probably licked the screen. I’m here to tell you, It’s okay….I understand. If I were you, I would probably do the same thing too…..
