Consuming vegetables on a regular basis can be challenging to some, but that’s probably because you may not be preparing it with as much love as you should, or you the technique used may not have been suitable for that specific food. I have a quick fix for that: Roast Your Veggies.
Over the years, I have developed a whole new appreciation for mother earth and all it’s abundant provisions. I’m now preparing vegetables on a completely different scale, that lays outside of the boundaries which I had become accustomed to. Familiar cooking techniques during my childhood were limited to boiling, steaming or sautéing. As an adult, I find that familiarity can lead to boredom and I despise boring food. I had never thought of roasting vegetables in the capacity that I do now. Being the adventurous, curious foodie that’s seems to be on a never ending quest to explore and educate, I adapted the art of roasting EVERYTHING.
The flavor profiles are truly amazing and the roasting varies for each vegetable while creating unique textures and concentrated flavors. Once roasted, most veggies transforms into what I call candy. I love the crispiness of the outside and the tenderness on the inside and the no fuss preparation. Herbs such as rosemary add depth of flavors that speaks volume and creates a desire to want more.
Extra Virgin olive oil, sea salt and pepper are the basic ingredients for roasting vegetables. Chop herbs of your choice if desired. Toss it all together and (depending on the vegetables and your desired texture), place it in the over for approximately 20 – 45 minutes. Don’t skimp on the olive oil either.
