Avocado Banana Pineapple Smoothie

Two months after my surgery, the endometriosis returned and you best believe I wasn’t the least bit happy about it. When the  surgeon told me that my only other option was to remove my uterus, I knew that I it was time to take my health into my own hands. I refuse to go under the knife unnecessarily. I began to stumble upon all kinds of informative website and hyperlinks and realized that I wasn’t all alone. There were millions of people out there who had undergone similar procedure as I had. I was in total awe and hungry for more knowledge. To date, I have the highest level of respect for  the lifestyles of vegetarians and vegan. They seem to be so disciplined. I’m even more fascinated by the creative dishes that some vegan and vegetarians prepare. They have me hook, line and sinker when they plate a dish so meticulously that I can eat it with my eyes first.

Avocado SmoothieI was and is still in total awe of the survivor testimonials. Being a cancer survivor myself, I commend those survivors who healed themselves through natural foods and alternative medicine.  I’ve alway eaten fruits and vegetables but I’ve become so inspired by their stories that I have blossomed into a earth eating fanatic myself.  I’m a lover of the earth and I play with my food a lot.

I think it was my son D’Angelo who had me to prepare an avocado smoothie for the first time.  Back then, I would add condensed milk and/or evaporated milk, ice, vanilla beans and some spices and it was SO OMG d’luscious!  D’Angelo even said my avocado smoothies were better than the ones his friends’ mothers made…..and they are of  Latin descent, so …..in my opinion, theirs should have tasted better  than mine, because they were raised drinking this stuff.  I’m not trying to toot my horn, but I’m just saying….

For those who may cringe at avocado in a smoothie,stop it now….just don’t.  You truly aren’t living if you haven’t tried a plain ole’ avocado smoothie.  Since then, I have been tweaking my avocado smoothies with all different types of fruits, and they are all super amazing.  At any given time, I may have anywhere from 2 – 6 pineapples in my kitchen. They are natural sweeteners which eliminates the need for sugars.  They say sugar is bad for you, but I eat sugar anyway, in moderation of course. Whenever I feel the need to add sugar, I sometimes use brown sugar or raw honey. I DON’T DO ARTIFICIAL SUGAR. I don’t care what your doctor told you. My body isn’t designed to ingest the ingredients in those artificial sugars. Sometimes I use coconut sugar. Anyway back to the avocado smoothie. I make smoothies frequently and always have bananas on hand, you know….they give that nice creamy texture.  I decided to combine the banana, pineapple and the avocado for a boss smoothie. I’m a boss and so are my smoothies….

I even added homemade coconut milk. I love coconut milk so much, It’s super easy to prepare, oh so d’luscious and I drink it ALL the time. I used to buy the store bought coconut milk  but not anymore.  So go ahead and try this smoothie. I promise it won’t disappoint.
