For each day that I plan to cook, I usually have a well thought out recipe. However today I hadn’t the slightest idea what we would be having for dinner. Let me rephrase that. I knew it would be chicken, I just hadn’t quite figured out how I would prepare it. At first, I thought of soup, mainly because today was rainy and windy and soups seem to be comforting on bleeky days. I was so busy multitasking: laundry, cleaning the house, while interacting on facebook, and taking to my other son on the phone for such a long time, that my phone just blanked out without warning. For a second, I thought I wouldn’t even bother to cook at all.
While doing the dishes, I decided to marinate the chicken. I did just that. I knew I would NOT be cooking rice or pasta. I just wasn’t in the mood for any of that. And then it hit me: VEGETABLES, ROASTED VEGETABLES, ROOT AND GARDEN VEGETABLES! I need not rack my brain any longer. That was it!
…And so this wonderful dish was born.
Before I could finish taking photos of my magnificent dish, my husband had already shared himself a plate and devoured it. He was nice enough to leave me his chicken skin. He hates chicken skin. I LOVE SKIN! It’s the best part! Roasting makes it so crispy and the marinade adds so much flavor. How could he not eat chicken skin?
Now my son D’Angelo is another story. He always invites his friends over for dinner. Today it was two of them. They hang out all the time, inside and outside of the house. I thought the chicken would be a little spicy for them, but they managed to eat it without crying. It was the “spicy” Jerk Chicken and they enjoyed it too. I wasn’t sure if they would eat the roasted vegetables, so I asked them which vegetables they would prefer. Funny enough, one child yelled: “I love onions!” I thought that was kinda strange for a child, so I asked, “do you eat okras?” He replied, “yes.” So I added onions to his plate, along with some okras and other veggies. They seemed to be having such a grand time at the dinner table, when suddenly, they both ran into the kitchen asking for water. Even though they declared it to be excellent, they absolutely felt or should I say, they tasted the “jerk.” One of them added a washable tattoo in the shape of a tear drop, and plasted it under his eye and said, “your chicken made me cry.” LOL….all I could do was laugh. These kids sure are something else.
