The food enthusiast in me, compels me to recreate, reinvent and fall in love over and over again with ackee and salt fish. Oh how I love this dish….let me count the ways. I’m hungrily staring at this photo while singing: “You are so beautiful to me, can’t you see. You’re everything I hope for, and everything I need. You are so beautiful to me.”
Call me crazy if you want to, but that’s how I feel about this right now. Let me just say, that if you ate ackee and saltfish with roasted root vegetables, you would be singing the same tune too.
In my efforts to create more vegetarian dishes, to meet the demands of my fans, I sort of mindlessly conjured up this delectable dish. I say “mindlessly” because sometimes I wander into my kitchen without knowing exactly how or what I’ll be cooking, but as I take inventory of all the ingredients I have on hand, I become inspired. I wanted to prepare something vegetarian without sacrificing flavors. I’m big on flavors and prefer to use herbs, spices and foods from the earth, that harmonizes and compliments each other, as well as the main ingredient. This dish has kudos, grammy and emmy awards written all over it and the taste is just as amazing.
