My friend Toya was visiting from Maryland and I wanted to make her visit more than pleasant, because she is very special to me. She is a true friend and real, true friends are better than pocket money. I created several dishes for her and these almond butter crostini with raspberries was just one of them.
I was really feeling myself when I made these crostini. I had prepared my home made almond butter and was keen on finding other recipes, where it would shine. I has some french bread laying around and decided, “hmmmn why don’t I make some crostini.” So yes, I waltz my pretty ass into my kitchen and worked my magic like I usually do.
I prepared a fruit compote to adorn the crostini. I had prepared some of the crostini with my home made cinnamon cranberry almond butter and some with parmesan cheese. Either way the fruit compote would compliment them both. Nut butters and jams/jellies marries well, so I decided I would add the compote along with fresh raspberries and and OMG they were totally awesome. Toya knows how to make herself at home whenever she visits. I make everyone feel welcome. She didn’t play around when it was time for her to leave, and made sure she packed up all these goodies in ziploc bags and took them on the plane with her. Toya is definitely looking forward to her next visit….and I can’t wait to see her and her pretty little girls. Hopefully she will bring them along next time.
