It’s the weekend and I do what I do best…Cook. Being the morning person that I am, I am up with the sun and down with the moon and the stars. I decided to get D’Angelo to assist with some chores and instructed him to wash the windows, but as usual he always has a rebuttal. He is way too old to be in time out, but he sure was going to face the wall today. As soon as I threatened to opt him out of breakfast, I received a much better attitude from him. Needless to say, the windows are washed.
I felt like making some pancakes (not from the box) with my confetti scrambled eggs. I prefer when my eggs are highly seasoned. It adds so much dimension to the dish. My bacon was done in the oven, which makes a crispier bacon that doesn’t shrink. I am feeling rather proud of myself as I journey on the path to everything that’s natural. Cooking everything from scratch is so much tastier and really makes a huge difference.
…And so I decided to make some oatmeal and cranberry pancakes, which was oh so simple! I also had some blackberries that I had intended to use on Thanksgiving Day but never got around to it, so I made a blackberry and cranberry compote to drizzle over the pancakes. What did I do with the remainder of the ham? May God bless whatever was left of it. I did what any sensible, resourceful person would do? I added it to my breakfast.
Even though D’Angelo worked my nerve this morning, I was still able to enjoy my breakfast, and he is blessed to be a part of the breakfast movement.
