Roasted Curry Cauliflower SaladTransforming my passion into my brand has brought so much awareness. Grateful and humbled at bringing my dreams to fruition is rewarding, even though sometimes anxiety seems to get the best of me. When I was a child, my grandma would rejoice right around back to school season. She amongst all parents would say to their children, “free paper bun!”  To this day, I’m assuming that it pretty much meant that because we would be attending school, she was finally able to have some peace and quite around the house for a couple of hours, while my cousins and I were no longer free to roam around, become a distraction or get in her way. I didn’t quite understand the joy of being by myself, without distractions until recently.

Achieving renewed statuses, titles and accolades is a result of hard work, commitment and dedication. Only God knows all that I do ‘behind the scenes’ to maintain my website, write a cookbook, develop recipes, photograph my dishes,  engage with my audience on multiple social media platforms while managing my household and these busy body children. I’ve never been so focused in my life! In order to avoid distractions, on most days I wake up around 2am (that’s usually when I’m highly inspired).

I was busy developing the recipe for this sent from heaven, roasted curry cauliflower salad and Lord knows the anxiety I experienced, anticipating the return of my children from school.They’re gonna be starving when they get home (they hate the school lunch and refuse to pack their own). They’ll want to fill me in the the days events or dictate what other random school supplies was requested. The list goes on and my serenity CEASES.

Y’all should have seen me watching that clock. By the time my children returned from school, all my culinary delights was completed, food photography of the roasted curry cauliflower salad was in progress and then….the anxiety kicked in. Will I be able to focus with the distractions? Will I have a decent photo out of the bunch? Oh Lord I’m burning out, please let there be a great photo. Why are these kids talking to me? “Get the dog bowls and share them some food. Take the dogs out for a walk,” I said nonchalantly. I need to sit down and eat. I’ve been so busy all day. Have I eaten all day? I don’t even think I ate anything except for tasting while cooking. OMG the carrot cornbread is in the oven! Story of my life. This only happens when I’m focused on completing a task.

Anyway, there were several steps to my roasted curry cauliflower salad, which I won’t disclose because the recipe will be included in my vegan/vegetarian cookbook. I’m also developing my own spice blends which is simply mind blowing. I love it! There were several other dishes that I had prepared but the curry cauliflower salad was the star. I swear it was more d’luscious than I had imagined. I went back for seconds about ‘three’ times. This is an absolute vegetarian delight!
