Roasting vegetables are a bit habitual for me. Just when I think I have had the pleasure of eating most if not all of the root vegetables that are in abundance and readily available, I find out that there are still others that I need to try. While roasting root vegetables at school one day, the chef mention candy cane beets. They were described as red and white on the inside, like spirals or swirls. I hadn’t seen these beets before, but if you know me, you would know that I was going to find them….and I did.
