I never tire of roasting vegetables. I enjoy roasted veggies so much that the only time I saute or steam vegetables is if I’m strapped for time or just wanna relax. As much of a food fanatic as I am, sometimes I just wanna chill. Today I had all the time on my hand. I probably dreamt of what I was going to cook. I really do. I sleep with pen and paper close by. Why? My inspiration seems to appear in solitude, without any distractions and of course, my foodie ass wakes up and documents my thoughts, from culinary ideas, to healthier living, life changes….I document it all. Because if I try to sleep, sleep won’t come and anxiety won’t allow me to sleep and if I do fall asleep and tell myself that I will remember all these thoughts in the morning; I won’t.
And yes I thought of all these vegetables and I knew they would be fantastic with my strawberry groupers aka butter fish for Jamaicans. I roast fish all the time and each time the ingredients are different. In my cookbook, From My Taste Buds To Yours, I have a wicked recipe with snappers. OMG I just can’t get enough.
See how easy this is. No standing over the stove. No watching the food. Simple preparation and organization is all it takes.
And because I ADORE herbs! Oh yes I do. I buy way too many herbs but guess what. I’ve started my own little herbs garden. It’s not quite where I want it to be, but it’s definitely a start. When I have a lush herb garden, I’ll be able to say that I’m saving a few buck here and there.
Is this divine or what? How much fresher can food get? Strawberry grouper done right with all these roasted vegetables which are excellent whole foods with no preservatives or artificial ingredients. Food is simply magical!
