Steaming and stir frying vegetables are amongst the different techniques that I usually use to prepare my dishes. While roasting vegetables requires little attention, the end results exudes an intense, robust flavor that anyone can truly appreciate.

I am living a healthier lifestyle, and usually have a bounty of fruits and vegetables. I don’t buy produce for show. I really do eat and incorporate them into my authentic dishes. Often, I plan in advance the meals I need to create for the entire week. At times, I just sort of wing it: while in the kitchen, my creativity shines and manifest itself into a tasty and delightful dish. When I lay in bed at night, I think of all the ingredients that I have in my pantry and refrigerator. Produce are perishable, so I have to ensure that I use them. After spending all my money shopping for everything healthy, I would hate for my items to spoil.

I didn’t feel like stir frying, and had the urge to include pasta, so I decided to roast the vegetables. The hardest part was slicing the vegetables. Everything else came together seamlessly. I mean, how long does penne take to boil? All that needs to be done, is add it to salted, boiling water for a few minutes. I also made the alfredo sauce from scratch. I’m one of those individuals, who reads all the ingredients and labels on everything. I used to stock up on alfredo and other pasta sauces, but since I have realized how simple they are to make, I very rarely pick up a jar. I somehow always seem to have the ingredients for everything.

I found this penne pasta dish to be extremely satisfying. Is it me, or have you noticed that pasta dishes tend to taste much better the day after? I think the ingredients get overly excited when left alone for an extended period of time. I could devour this authentic pasta dish over and over, hot or cold and the d’luscious never dissipates. There is another upside to this dish; because of its versatility, it can be eaten as an main course, side or a salad.
