Stewed Chicken with Cabbage

 

My grandma has been diabetic for many years and it is such a rewarding experience to be able to care for her for all these years. I get to listen to her reminisce about the past and keep me abreast of all the things that I have forgotten. Currently she is 84 years of age and her brain has never been sharper. Alzheimer’s has no place in her future.

I now have a dialysis patient on my hand. No, it isn’t my grandma. It’s another relative that just wouldn’t listen. Whenever I would encourage eating more fruits and vegetables simply because it is vital to our health. The response that I would receive from this person was that it’s mind over matter. Mind over matter my ass. Now I have recently gained the title of personal cook to this “hard of hearing” relative, who get dialysis several days of the week. Hard of hearing is a term that Caribbeans use to describe someone who refuses to listen, and in my case, be receptive of my healthy advice.

This stew chicken with cabbage was not centered around my diabetic grandma, even though she enjoyed every bit of it. This was for my special dialysis patient. This person doesn’t like vegetables, so I have to try and get the vegetables in, wherever I can fit it in, without sacrificing the flavors. So stewed chicken with cabbage was a definite win. It’s a simple and easy dish that anyone can make. Here I am replenishing protein with the chicken and cabbage has a host of health benefits as well.  I’m getting hungry just looking and this photo and will be fixing myself a plate right now.
