Cod Fish Fritters

 

I couldn’t wait to make cod fish fritters this morning. I had anticipated frying up a huge batch this weekend; but with having to do  the laundry, updating my blog and interacting on my Facebook fan page; time wasn’t  accommodating. To say the least, it just never made it on to my hectic “things to do/cook list.” However, it was well worth the wait. The fritters were  fluffy, golden and highly seasoned.  I grabbed about seven of them, which I packed with the rest of my lunch for work and left a few for my grandma.

After all that multitasking, I still have to look forward to more laundry later…or maybe the weekend. Robert, my 19 year old is just as spoiled as D’Angelo. He claims he only does his laundry once per month. Yeah right!  That really translates into a huge pile of laundry in his room, that  mommy Ange’luscious winds up washing anyway. I really try to keep his room door closed. I really try to stay away from his room. Being the neat freak that I am; he knows and understands that I am unable to focus whenever anything is in disarray.  I usually surrender and just do his laundry for him anyway.
Get this: whenever I stick to my guns and stand firm on my decision that no matter what,  I’m not going to do his laundry; he actually throws them out of his room. Yes! A big ‘ole pile in front of the laundry room door. Now, how pray tell can his mother not see THAT?  I should take a photo and upload it to Facebook.  Maybe he will stop. I know, I’m just as bad for allowing it and I need to be disciplined as well.  But, they are my children and one day… just one day when they are on their own….they will have to clean up after themselves.

Funny enough, when they visit other peoples homes, they receive all these accolades about them being well mannered, helpful and excellent cooks. The only skill they practice at home, is being excellent cooks.  Yes, both D’Angelo and Robert CAN cook.

Now my grandma, Dulcie has also been making multiple requests for the saltfish fritters. We use the term “saltfish,” not salted fish. Enough of that “ed” on the end.  I had to go to work this morning and she wouldn’t stop reminding me (more like begged relentlessly for these fritters).

So there I was with an hour to leave the house for work.  I hadn’t showered, packed my lunch or anything.  So I put the “S” on my chest and the batteries in my back:  I was emptying the dishwasher, prepping the vegetables and herbs which I would later fold into the fritters, boiling water for my tea, checking my grandma glucose level with the glucometer,  packing my lunch and frying up a quick batch of these fritters. You should have seen me!  Then I had to shower, get dressed and ready to face corporate America.

That evening when I returned home, I had the nerve to ask D’Angelo, if there had left any fritters for me. His appetite is just a big as mine, if not bigger. I could see the smirk on his face as he took great pleasure in telling me: NO.
All I could do was give him that blank stare.
