Does your country of origin have a national dish? Jamaica does. It is Ackee and Saltfish, and I can never get tired of Ackee and Saltfish. In this rendition it is Salted Cod. You can use any type of salted fish, as they provide a similar taste. Unless you are able to distinguish the taste between different fishes, you won’t be able to tell if it was Salted Cod or Salted Pollack. They are just as good.
I add all sorts of ingredients to my Ackee and Saltfish. This is the traditional version. I deviate from this recipe quite frequently and will add other ingredients that I may have on hand, to create another authentic culinary experience. Do they all taste the same? No, each dish has its unique taste. However they all share one interesting ingredient: Ackee. They are all equally d’luscious. Speaking of Ackee, since I do not have an actual ackee seed, I need to find a farm that sells them and buy one for myself. I received a flyer in the mail from a farm that has all types of exotic trees, even the ones with fruits that I grew up seeing and eating in Jamaica, like june plum and naseberry. The joys of living in South Florida! I will add that on my list of things to get. It will definitely be a worthy investment.
