Food should be celebrated, all day everyday, and I do that, just about everyday in my house. I don’t wait for special days or events to celebrate what God has abundantly provided for me. I tell my friend all the time that as long as you understand how to shop for groceries; it doesn’t have to be expensive either, I guarantee you will always have a meal.
I usually buy whole chickens because it is much cheaper by the pound. I may buy 4 chickens at a time. Whenever I fabricate my chicken, I sometimes reserve the breast for other dishes such as stir fry. I don’t see why I should spend double or tripple the amount that I would pay for an entire chicken, just for some chicken breast with no bones. I love bones. The flavor lies within the bones and I’m pretty big on flavor.
Ackee pairs with just about anything. Ackee and chicken is an excellent combination. If you haven’t tried that, I strongly recommend that you do so. Steamed, fresh from the garden callaloo cook in under 20 minutes and when seasoned perfectly, it’s oh-so-buttery-melt-in-your-mouth good. I purchase callaloo from a local farm and the taste is remarkably different. I now refuse to buy callallo unless I actually witness it being rooted from the earth. The taste far supersedes anything of its kind. If you’re able to get fresh callaloo, by all means, get a ton load of it, chop it up and freeze it for later use..
