Vegetables excite me. For real. I think I love my vegetables just a little bit too much. But that’s okay, because they love this gorgeous body right back. The feeling is mutual between us. Yeah my vegetables are just as fascinated about me as I am about them. I utilize my skills to bring forth their full potential. I have converted many folks into vegetable lovers. My friend Nikki can attest to that. She always tell everyone, that I’m the only person that can make her eat her vegetables. Ain’t that the truth? That makes me super proud.
I had an array of vegetables and knew exactly what to do with it. I thought: “something with an oriental flair would be nice.’ I wanted soba noodles but didn’t find any, so I substituted with spaghetti. When cooking, or following a recipe, never get discouraged because you don’t have all the ingredients on hand; and don’t run out to the store to buy each and every single ingredient either. Use what you have on hand. Make it work. Create your own dish by authenticating it with your signature ingredients. Own it.
In no time Ange’luscious’ Shrimp Lo Mein was born. I barely cook my vegetables because I prefer the crunchy texture and I added some jumbo shrimp, because I always seem to have shrimp on hand. And the sesame noodles really made me feel as if I was away from home….maybe somewhere in Asia. Needless to say, it turned out beautifully and everyone in the family enjoyed my d’luscious Shrimp Lo Mein.
I urge you to go and create you a masterpiece with a few vegetables. Even if it’s just one vegetable; that’s fine with me. Go ahead. Do it. Own that dish.
