Banana Bread drizzled with Banana Blueberry Compote

 

I love bananas.  I transform them into refreshing smoothies, banana fritters, pancakes, sauces and breads and muffins. I never throw out bananas. When their dark spots settle in, that’s when they become super sweet. I prefer to  “eat” my bananas when they are firm and ripe. Once they become spotted, it’s an indication for me to begin some form of cooking, which I really enjoy, as they can become d’luscious treats.

Who thinks of toasting an already made banana bread, then show a little more love and affection by drizzling it with a fruity compote? I do.  I love compotes. They are super easy to prepare, doesn’t require much ingredients and adds that over the top kinda zing to anything baked (which doesn’t necessarily have to be pastries).

I think all cakes and pastries are most pleasing to the palate fresh out of the oven when it’s warm; like right out of the oven goodness. Even though it remains d’luscious once it cools, I still feel the need to channel my creativity.


The next time you make a banana bread, try drizzling some fruit compote over it. If you really enjoy it, then go ahead; do it again! With just about every single banana bread that I bake, there are tons of blueberries suspended inside of it, which creates that lovely burst of juiciness in your mouth with every single bite. I freaking love it!
