Basil Pesto, Sun Dried Tomato, Shrimp, Shells and Cheese

 

Pesto Shrimp Shells and CheeseLast Thanksgiving, they couldn’t get enough of the crab mac and cheese, which was one of the dishes that I had prepared, but this Thanksgiving, my pesto shrimp shells and cheese was even more dynamic.  I’ll have to admit, it was indeed irresistible, not to mention delectable.  It definitely had that “come back for more and and I’m gonna need more after that” effect.  My son’s fiancé  was just moaning and groaning with her ‘OMG this is so good’ outbursts.

I remember the days when I enjoyed mac and cheese with only the addition of  extra sharp cheddar cheese.  Now that I have a more sophisticated palate and appreciation for all things food, I tend to play around with all kinds of cheeses. I’m amazed and thrilled all at the same time. I love cheeses that have a creamy texture, the ones that  sort of melts in your mouth. I love flavored cheese as well, especially the ones that are flavored with herbs. I add them to my meals and sometimes I just eat them as is.

If at any time you truly need to piss me off or receive a blank stare from me; all you have to do is mention that you buy mac and cheese in a box and you love the powdered cheese packet, and include it in the preparation as well. I may respond with a, “like seriously?”  I may even try to deter you from the box, and if you are receptive, I may coerce you into creating a cheese dish that’s much more pleasant to the palate,  because I want you to understand that food should always be amazingly d’luscious. Back when I was a teenager, I ate lots of  the mac and cheese from the boxr, so It’s not as if I’m not familiar with it..  However, I’m grown now …… and unless you don’t know better, because you never had anyone to educate you, there is absolutely no reason why anyone should be eating cheese sauce from a packet.  Show your palate some love:  eat real cheese.
