The peace that surpasses all understanding engulfed my entire being, while making this colorful, healthy Beetroot Salad. It was the usual Sunday, where I had so many chores to complete, however the day went well and it was just like the song goes, “Easy like Sunday morning.”
I needed a salad to go with my dinner, and I didn’t care for the standard lettuce and tomato. I needed to spruce it up a bit. Now I don’t know about you…but for me…standing in my Sanctuary aka my kitchen, and taking inventory of all the food items that I have on hand, brings me so much inspiration. I may have absolutely no clue whatsoever….let me rephrase… I may have an ingredient that I usually select as the star ingredient (and in this case it was the beetroot). With that star ingredient, I will work around it and create something so harmonious, only God would understand. This is exactly what happened with the beetroot.
I whipped out my box grater, and began shredding the beets. Then I remembered that I had carrots in the refrigerator, which I opened and grabbed a few. I opened the drawer at the bottom of the fridge and notice a few other items, iceberg lettuce, brussel sprout, red cabbage etc, but today I would only choose the iceberg lettuce that desperately needed to be loved and utilized. I very rarely purchase iceberg lettuce and it has always taken the back seat, but not today. The iceberg lettuce was going to provide that extra crunch to the beetroot salad. I grabbed the dandelion leaves and said, “nope, I already added you to my juice this morning.” So I opted for a mesclun salad instead, which was 50% mixed greens and 50% baby spinach. Your probably going, “my God, her refrigerator has lots of veggies!” YES IT DOES. I call it my pharmacy.
Anyway I added a few more ingredients to create this vibrant, healthy, colorful beetroot salad…and you know what…it didn’t even need any salad dressing. It’s marvelously d’luscious on it’s own. Now if you would like to add some dressing to yours; Go right ahead.
Beetroot Salad Recipe
You will need:
3 Medium purple beets shredded
5 carrots shredded
1 small iceberg lettuce shredded or chopped
1 yellow bell pepper sliced about 1″ thick
1 orange bell pepper sliced about 1″ thick
10oz mesclun salad
1 medium cucumber peeled and diced
Instructions:
Combine and Toss all ingredients
Serve and Enjoy
It’s perfect without any dressing!
