Today was a great day. I cooked, cleaned, did the laundry and still managed to feel as light as a feather. I still have a basket of clothes that needs folding, but I won’t overdo it. I will now remove the “S” from my chest and relax. I have spent half of the day in the kitchen, since 7am this morning. It’s now 8:53pm as I’m typing.
Dinner was well worth it. I prepped a whole chicken and had it marinating in the refrigerator since early in the morning. That was the first thing on my list. I like to have all the seasonings “soak.” It makes it so much more flavorful. I made my rice and red kidney beans (rice and peas) from scratch again. My son D’Angelo was very helpful and assisted with cracking the coconut, that I used to make the coconut milk. I hand grated the coconut, blended and strained the milk. Wow! I say this often: anything with coconut in it is amazing! How can you possibly go wrong with coconut?
I wanted a salad but not the usual salad. I have been drinking so much beets, but wanted to EAT it today. I decided I would incorporate it into my salad. I love beets and makes beetroot juice on a weekly basis. Depending on how much I prepare and how quickly my family consumes it, I may drink it daily. I can never tire of beetroot juice.
Thank God my child was outside playing when I was plating up this food, because he would be complaining that I was taking too many photos. As a blogger, my entire family has to WAIT until I am completely satisfied with the photos, before anyone eats. I guess I’m off the hook and doesn’t feel guilty for making him wait. I have a very demanding child, and when he starts to whine about food, you would think that he hasn’t eaten for the last 7 years.
I am just thankful to the Almighty for all my blessings and that HE continues to provide and bless me. Today was absolutely peaceful.
