Simple, sweet, rustic blueberry scones, crunchy on the outside and chewy on the inside, reminds me of a comforting snack from my childhood, that my grandma would sometimes bake. Scones in the USA, are also known as rock cakes in Jamaica. I’m not sure what other names are used for this awesome treat in other parts of the world. Growing up, I noticed that rock cakes were mostly prepared with raisins. Now that I’m a grown and pretty ass diva, who has unlimited access to lots of fruits; I tend to use them to enhance my products as well as my creativity. In this case, I chose blueberries. You can add any fruit that your heart desires.
I used blueberries because I love the explosive burst of flavor in my mouth. Instead of butter, I used coconut oil which added that coconutty flavor that I can’t seem to get enough of.
In the USA, scones are usually paired with a cup of coffee. I prefer tea. I love herbal teas and sip on several cups throughout the day. I rarely eat scones for breakfast. It’s usually a snack for me when I’m curled up with a book or watching television. Eating scones creates a nostalgic feeling and brings back lots of memories of growing up in Jamaica.
