What I love about pork chops, is that it is a very tender cut of meat. It can be cooked in the same amount of time as you would chicken.  I season it with my own personal seasoning blend which is simply d’luscious! Sometimes, I give it a quick fry on each side and I really enjoy the crunch and I will enjoy it just like that. At other times, I allow it to simmer in a sauce, where the pork lends it own unique flavor to create a much tastier dish, like it did with this one here. The tangy flavor from the mustard and the mellowness from the white wine, complimented this fantabulously. If you have never cooked with wine, I do think you should try it at least once, then decide if it’s a winner. Everything ain’t for everybody, but I sho’ loves me some alcohol in my food.  You know what’s funny? I’m not even a drinker. My tolerance is so low, I can get drunk off of a capful, but I will always have a bottle of chardonnay,  pinot noir, moscato, cabernet sauvignon, vodka or even Jamaican white rum in my kitchen.

My dinners are usually based on the ingredients that I have on hand, and I happened to find some rainbow carrots laying around. I’m a culinary extraordinaire, so yes I have food ‘laying’ around. My most loyal and passionate relationship ever, is probably with food. I dream about about food. I get super excited about food. I can talk of food like it ain’t nutten! If you ever want me to remain quiet, don’t ever bring up food because once you do….baby its’ on!

Colorful dishes brings me joy. Colorful kitchen equipment such as this cast iron skillet emits emotions that inspires me to cook and create awesome masterpieces. Everyone should own a cast iron skillet, which is that beautiful red pot in the photo. Like a stainless steel pan, it sears the meat well and everybody loves a good sear. This technique seals in the juices. Nobody enjoys dry meat. Cast iron skillet are multipurpose tools. They stand up to, and distributes the heat evenly. I can cook and bake just about everything in cast iron skillets. It’s a really great investment.
