On certain days, I prefer to deviate from the usual and create authentic dishes straight from the core of my heart. I enjoy being different. So what if it isn’t the usual Oxtails with rice and beans. I cook whatever my palate and tummy orders, and in this case, it was Oxtails with Roasted Vegetable Pasta, accompanied by lettuce greens topped with walnuts. I love walnuts, in my salads, pastries or just on it’s own.
This meal is so versatile, it could’ve been divided into two or three separate meals. The oxtails were so d’luscious, I could have eaten it all by itself. The Roasted Vegetable Pasta as well as the lettuce greens,could easily stand on their as vegetarian delights.
I have been told that red meat isn’t easily digested, and I do try to eliminate how often I consume this delicacy. However I keep hearing the oxtails calling my name, even sometimes in my sleep. I don’t eat it everyday or every week, but it seems as if it realizes when I’m trying to avoid it. I won’t deprive myself. As long as it is in moderation, I may have my oxtails once….or just maybe twice per month….or every other month. The risk is so worth the reward!
