Callaloo with Kale and Beet Greens

 

Dark green leafy vegetables: Callaloo, kale, beet greens; full of antioxidants; vibrance, richness, energy, light; sustenance of life; a nutritional powerhouse. Leaves of life are true representation of life, glory and abundant blessings. Today I honor my grandma, Ms. Dulcie, the LADY IN MY LIFE, as she celebrates another day in her life on her 86th birthday.

God is truly amazing and I am  more than blessed to have my grandma in my life.

Today and always, I give thanks and honor Ms. Dulcie.
While I lived in Jamaica, I looked forward to my breakfast, lunch and dinner prepared by the most greatest cook ever: MY GRANDMA.  Her dishes were prepared with all fresh and natural ingredients, AND lots of love. They were amazingly d’luscious! She raised her own chickens and we had our own eggs. Boy do I miss that! She is the epitome of a domestic goddess.

Ms. Dulcie fed everybody and was always in the backyard cooking something. Every body loved her baked treats, especially toto and sweet potato pudding. The zinc pan and the charcoal fire was her oven. I can still taste the crust on the top of that pudding. A Ms. Dulcie seh “fiyah a top, fiya a bottom and hallelujah inna di miggle!”

Our relatives could always rely on my grandma if they ever needed a meal. Even though I’m now reigning as ruler of the kitchen in my house, Ms. Dulcie has and will always be my culinary idol. She still holds on to her independence and prepares porridge, fried dumplings and fried plantains, whenever she’s in the mood.

I thank God for the culinary trait that she passed down to me. Thanks God she wasn’t one of those grandmas that love to keep malice wid dem kitchen!
