Curried Goat is an all time favorite. Curry is an ingredient that has a unique taste and makes everything exceptional. It is in a class of its own. Curry will totally transform and revive any average dish. There are many variations of curry. It can be purchased in powder or paste. I prefer to cook with the powder form because that is what I am accustomed to. My mom and grandma uses curry powder. Not only is it fragrant and inviting, but it creates an unexplainable, undeniable union especially when additional spices and peppers, such as scotch bonnet are co-mingled and incorporated into the dish.
I have yet to meet an individual who doesn’t love curry. As a Jamaican, once your ethnicity is exposed, everyone is your circle immediately wants to know if and when you will be cooking curried goat. Jamaicans tend to honor the “ram” goat, as it is acclaimed to be tastier. The ram goat head is also used for making a soup called manish water. I myself is unable to differentiate between the male or female goat. My two boys who are Americans, couldn’t care less of the goat’s gender and are huge fans of the curried goat as well. Every opportunity they get, they introduce curried goat to their friends.
