Brown Stewed Chicken (Jamaican Style)

 

Brown Stewed Chicken is traditionally cooked on Sundays and is eaten with rice and peas. As a child, I craved for this dish and couldn’t wait to taste my grandma’s cooking. My grandma prefers stewed hens but the fryer chicken was my favorite.  Now that I am all grown up and is stewing my own hens, I can definitely see what all the rave was about.  There was definitely something special about my grandma Dulcie’s cooking.

The most d’luscious part of this meal is the sauce.  Jamaicans refer to the sauce as “gravy”  ….and oh how I love gravy, let me count the ways!  In moderation, that is.  Eating rice and peas without the gravy is usually deemed an abomination, to most Jamaicans. It compliments the dish and at the same time, it soothes your soul. It is definitely a topic to discuss or write home about.  My friends have referred to  this dish as “Brown Stew Barbecue Chicken” because the sauce is “that d’luscious.”   It is intoxicating.  I have had several neighbors knocking on my door, wanting to know: “What’s in that sauce?”  But then again, that is expected when food is loved and shared with those you love. Not only is it satisfying…. it soothes the soul.
