Mackerel in Coconut Milk

We are so accustomed to buying salted mackerel, (which is usually oh so flat and not meaty at all), then soak it to get the salt out before cooking it. Keep in mind that our forefathers and mothers didn’t have refrigeration way back when and used the salt to preserve meat and fish. I buy fresh mackerel all the time. I love it when it’s fresh out of the ocean. The taste is soooo PURE. Here is my fresh mackerel absorbing all the wonderful flavors of coconut milk infused with onions and yellow tomatoes, and scotch bonnet of course. WOW!!!

Even though we now have all the luxuries and amenities, some folks refuse to think outside of the box and will only buy/eat salted mackerel.
