Frying really isn’t as bad as they make it out to be. I fry all the time and don’t even care. Ain’t nobody gonna scare me from eating great, d’luscious food…nobody! Believe it or not, the problem with frying isn’t the fried food; it’s the unhealthy oils that are used to fry the food. As for me, my main oil is extra virgin, organic coconut oil, however I use all kinds of oils….healthy oils, such as extra virgin olive oil, avocado oil, sunflower oil, hazelnut oil, walnut oil…you get my drift. The excellent over magnificent oils. Even though I don’t use them all for frying, (some I use in salads), I don’t worry about frying. I fry in peace and enjoy all of my not-so-guilty pleasures, cause I damn sure ain’t guilty… and never will be.
If you’re thinking, “who the heck makes ackee and saltfish fritters?” then you have probably forgotten how much of a foodie I am. You’ve probably heard it a thousand times; yes, I’m always outside of the culinary box. It’s a compulsive disorder, I guess. I dream about food. I really do. No joke. I’ll wake up in the middle of the night and just jot down stuff….recipe stuff or plans for dinner…or any and all things food related. Ideas just shows up in my head.
Then one day I just woke up and decided that I was going to make ackee and saltfish fritters. I mean, heck… fritters can be anything! I’ve seen all kinds of fritters and still haven’t seen it all. Whatever fritters aren’t out there, trust and believe…I will invent it. It’s not that difficult: A batter and a star ingredient along with a few other additions here and there, and it’s a done deal. I’ve gone to fritter land many a times and I love it there so much, I return quite often.
Now who would refuse these fluffy, flavorful fish cakes? Definitely not me. My son Robert LOVES ackee and salt fish. Matter of fact, I think it’s his favorite dish. So much for my Jamerican child…and he’s not afraid to work it with some dumplings. He gets really excited when my creative juices flow, especially when his favorite dish is the main ingredient. You should have seen the look on his face when he bit into one of these. It was pure delight!
