Jerk Turkey Wings in Mushroom Gravy

 

 

Have you ever been invited to Thanksgiving dinner in a Jamaican home?
If you’ve been fortunate to receive an invitation, you would have noticed that the food selection/menu in no way, shape or form epitomizes the traditional American Thanksgiving dinner.
Wanna know why?
Based on experiences with turkey, most Jamaicans are under the assumption that the turkey is a big, tasteless bird that usually lacks flavor, cooked to unpalatabilty, and super dry to the point where you may possibly need the Heimlich maneuver due to choking.

Now that’s where I take my queue! Food should always be celebrated. Turkey can be amazing and super moist, if you learn how to cook the bird with loads of flavor. Turkey doesn’t command much attention.  Once the bird is highly seasoned (which is how I prefer my food), eventually, everyone will fall in love.

It took some time for me to appreciate turkey. I honestly didn’t understand the rave about turkey in America. I had to combine my chef skills along with my sophisticated palate and season this bird to the highest level.


Turkey doesn’t have much fat. Matter of fact, it is considered lean meat and most health conscious individuals would gravitate towards turkey simply for that claim. I must say that my opinion of turkey has changed drastically. I have mastered the art of creating mouth watering food porn, such as this jerk turkey in mushroom gravy.
