Roasted Chicken with Vegetables – Homemade Boxed Lunch

 

Had anyone predicted that I would be super crazy in love with vegetables, I would’ve probably given them the blank stare, which is what I normally do to avoid being rude or saying something that would be interpreted as offensive; while in the back of my mind, I’m saying, “this child is crazy!”

Right now I am dumbfounded myself. Why? The only reason I started this website was because my son recognized that I was a blogger and volunteer to design my website, where I would showcase all of my authentic dishes. After he carefully illustrated all his other plans for me, I gladly accepted. What he had initially asked for, was one single curry chicken recipe. Well, as you can see, it has turned into a website, which requires constant updates and a Facebook page  that requires much interaction and engagement. Am I complaining? Heck no! I’m loving every bit of it. I’m embracing my passion: FOOD.

Little did I know, that I would develop a new found love not just for food, but for my overall health as well. I spend so much time researching health related topics, and is never bored. If you truly want to get my attention, all you have to do is initiate discussions about food, or invite me into an online food forum. I spend way too much time researching and my brain is so hungry for all this healthy information, that I wished someone had introduced me to a healthier lifestyle earlier on in life.

Well guess what? It is never too late. I am on my journey to a healthier lifestyle and am loving it. Sometimes I even fall asleep with my laptop in my lap. I have actually fallen asleep midway into composing a post for my Facebook page.  My husband usually puts the laptop away, whenever this happens. I would wake up in the morning and notice that I didn’t hit the share button.

Isn’t it amazing how the body works. It shuts itself down when it’s overexerted. The brain sends signals to different parts of your body. The brain dictates when you are full….amazing! So now that my diet is comprised of about 70% fruits and vegetable, my body craves it, if I fall off the produce wagon for a day or two. My body is adjusting,…wow…and I actually crave vegetables. I rarely crave rice. At one point in my life, I had to have rice everyday. I could feel a reduction in my glycemic level if I went without rice.  Well not anymore.

Roasted vegetables fills me up and it the taste is out of this world.  I gave my co-worker a taste of my roasted vegetables and she couldn’t get enough. She wanted to know how I achieved the taste, and if I did anything special to the beetroot and how did I cook it?  She had lots of questions. I love when others are fascinated by my food. It gives me an opportunity to start preaching about foods from the earth and how much better it is for your body.

It is a regular habit for me to cook my own lunch for work. I decided to box it up. I was actually testing the strength and durability of this foam box. The roasted chicken was d’luscious. I couldn’t help myself….I ate the majority of my homemade boxed lunch the minute I arrived at work….way before lunch time. It was filling, so I was perky for the remainder of the day. I ate the remainder later on in the day. I didn’t even reheat it…and it was still …pow wow!

I so love my veggies!

Update: I am now aware of the toxicity of foam containers and no longer use them for packaging hot foods.
